These delicious paneer enchiladas are filled with spicy vegetables, jalapeños, and cheese, then smothered in a rich homemade red sauce. Air-fried until the cheese is melted and bubbly, they make a comforting and flavorful vegetarian meal.

Ingredients
6 flour tortillas
Red sauce:
2 tbsp oil
¾ tbsp chopped garlic
1 cup readymade tomato puree
3 medium tomatoes pureed in the mixer
1 tsp sugar
¼ tsp salt or to taste
½ tsp red chili flakes
1 tsp oregano
Filling:
1 tbsp oil
1 tsp chopped garlic
1 onion chopped finely
1 capsicum chopped finely
¾ cup ready-made baked beans
A few drops of Tabasco sauce
½ cup crumbled or roughly mashed paneer (cottage cheese)
½ cup grated cheddar cheese
1 tsp salt
1 tsp oregano
½ tsp pepper
1 tsp red chili flakes or to taste
2 tbsp finely chopped jalapenos
To serve:
¾–1 cup grated pizza cheese (mix mozzarella and cheddar).
Recipe Instructions

Prepare the Tortillas

Get the flour tortillas ready and set them aside for assembling the rolls.

Prepare the Red Sauce

Heat 2 tbsp oil in a pan and add garlic. Stir in the remaining sauce ingredients and cook for 5–7 minutes, until the sauce thickens and is no longer runny.

Prepare the Paneer Filling

Heat 1 tbsp oil, add garlic and onions, and sauté until light golden. Add capsicum, salt, oregano, pepper, and red chilli flakes. Stir in jalapeños and paneer, cook for 1–2 minutes until semi-dry, then remove from heat and mix in the cheese.

Assemble the Rolls

Place a tortilla on a flat surface and spread 1 tbsp red sauce evenly over it. Add some filling in a row through the centre and roll the tortilla forward. Repeat with the remaining tortillas.

Arrange and Top with Sauce

Spread 2–3 tbsp sauce at the bottom of an Oxy Fryer-safe serving dish. Arrange the tortillas in the dish, pour the remaining sauce over them, sprinkle with grated cheese, and cover with foil.

Air Fry and Serve

Preheat the Oxy Fryer for 5 minutes. Place the dish in the fry basket and cook at 180°C for 10–15 minutes. Serve hot.
