These crispy prawn samosas are filled with juicy prawns, peas, and potatoes blended with aromatic spices and fresh herbs. Air-fried to a golden, crunchy finish, they make a delicious snack served with green or tamarind chutney.

Ingredients
For wrappers:
For 100g maida – 15g desi ghee / 15g refined oil.
1 cup (100g) maida.
1½ tbsp melted desi ghee/refined oil (15g).
Salt to taste.
Enough water to make a stiff dough.
For the filling:
2–3 big potatoes boiled and mashed roughly to break into pieces.
14–15 medium prawns cleaned and de-veined.
½ cup boiled peas.
2 tsp garlic finely chopped.
1 tsp grated or finely chopped ginger.
2–3 green chillies finely chopped.
1 tsp jeera (Cumin seeds).
2 tsp coarsely crushed sabut dhania (Coriander).
2 dry red chillies broken into pieces.
Salt to taste.
½ tsp amchur (Dry mango powder) powder.
½ tsp garam masala powder.
1 tsp red chilli powder.
2–3 tsp coriander leaves.
2 tbsp mint leaves.
½ tsp soya sauce.

Prepare the Wrappers

Sieve the maida and add salt and melted ghee or oil. Rub well to combine, then add just enough water to form a stiff dough. Avoid over-kneading. Cover and rest for 20–30 minutes.

Prepare the Prawn Filling

Heat a little olive oil in a pan and add cumin seeds. Let them turn brown, then add coriander seeds and dry red chillies and sauté for 30 seconds. Add garlic, ginger, and green chillies. Mix the dry masalas with 1–2 tbsp water and add to the pan. Add prawns and sauté for 1 minute until slightly pink. Add peas, boiled potatoes, mint, and coriander leaves. Mix well, remove from heat, and let the filling cool.

Shape and Fill the Samosas

Take marble-sized portions of dough and roll each into a thin chapatti. Cut into two halves and apply water along the edges. Fold each piece into a cone, fill with the prawn mixture, and seal the top with a little water.

Air Fry the Samosas

Preheat the Oxy Fryer for 5 minutes. Arrange the samosas in the fry basket and close it properly. Set to 160°C for 20 minutes, then increase to 180°C for 10–15 minutes until they reach the desired golden colour. Serve hot with green or tamarind chutney.
